Cake And Coffee For Breakfast
Decandent and reasonably healthy
I woke up at 6 this morning feeling super energetic, so I decided to make a chocolate cake.
This totally thrilled me because I was diagnosed with metastatic brain, lung, and liver cancer in April of 2021 and given 6 months to live. The surgeon who gave me this diagnosis told me the last couple of months would be spent in hospice care.
It’s been almost 3 years since that meeting and I am still alive and not in hospice care. I am fragile, and have days I am exhausted and spend most of the day resting, but I also have days when I get stuff done.
Yesterday I had a brain MRI and I am still waiting on the results. I came home very tired after the scan and went straight to bed.
Yet today I made a cake.
Why? Two reasons.
- Because I don’t know how long I have, so I might as well eat cake.
Decadent, moist, rich chocolate cake filled with butter, diced walnuts and dark chocolate chips.
