Egg Drop Soup with Greens
Quick, healthy recipe
As some on here know, I am fighting cancer. Because of this, I’ve changed my diet quite a bit.
I seldom eat out anymore. I don’t know the ingredients, and there are certain things, such as sugar and many vegetable oils, that I know are not beneficial for me.
When I make meals at home, I avoid those problems since I know exactly what I am putting in my food. That helps me to get the nutrition I need without any of the toxins. However, the downside is that many recipes are time-consuming.
That is the wonderful thing about this soup. It took me 10 minutes total to make.
What’s in it?
- Home-made broth — a pint
- Pastured eggs — 2
- Shredded greens — 1/2 cup
- Flavorings
That’s it. It’s really simple. For the flavorings, you can stick to just salt and pepper, or you can get a little fancier, which is what I did. For the greens, I used dandelion greens, but spinach, kale, or chard will work. If you are not a big fan of greens, then spinach is the mildest.
For the flavoring, I added a tablespoon of Bragg’s liquid aminos which I tend to use instead of soy sauce, a teaspoon of apple cider vinegar, a half teaspoon of organic…
