The Easiest Home-Made Soup

A few years ago, while my husband at the time and I were living near Houston, our friends Beth and Terry visited for the weekend. After spending a day having fun, we came back home ready to kick our shoes off and chill.

As we relaxed, my friend Beth said, “But I suppose we’ll have to go out again for dinner.”

“Not true,” I said. “We can have dinner ready in less than 20 minutes.”

She didn’t believe me. Yet a little over 15 minutes later I served up home-made tomato soup. Accompanied by bread or rolls, it’s a meal that almost everyone likes. I added a side salad, which I made while the soup simmered.

The nice thing about this soup is that you can keep all the ingredients in your pantry, ready for whenever you have unexpected guests or a craving for something hot and home-made. It’s also fairly versatile — there are plenty of mods and accompaniments that go well with it.

What you need to make 4 generous servings:
