Making Oatmeal For Mom

It’s nice to serve her breakfast for a change

This morning I was feeling better so I got up early and made breakfast.

Because I have cancer, this is not always possible. In fact, a lot of times I will ask Mom to make me an omelet because I feel too tired and weak to do so and I know I need the protein. Even though Mom doesn’t eat eggs she makes amazing omelets because she is so careful. She uses a small hand held mixer to make sure the texture is perfect, carefully arranges the filling, etc.

This morning, however, I felt pretty good, so I made oatmeal. I used both water and macadamia milk and carefully measured out the right amount of oats to make sure it was the texture Mom prefers. I added dried cranberries and a pinch of salt as well. The nut milk adds a nice flavor and creaminess and the cranberries plumped up nicely.

After putting the oatmeal into pretty bowls, I topped with sunflower seeds, a drizzle of honey, and a sprinkle of cinnamon.

Mom woke up to find breakfast ready and was both surprised and pleased.

I was really happy to make her breakfast for a change.

I love to do that — to surprise people I love with something to start their day feeling a little pampered. I used to make my ex a “full Irish breakfast” once…
