Making Stifado — Greek Beef Stew
A way to use fresh oregano from my friend’s garden
I have a buddy that I walk with most mornings. She’s been really patient and kind while I have been dealing with cancer — when I am too tired to walk, it’s not a problem. She checks in with me and on the rare occasion when I’ve needed something from the store, she has been happy to pick up a few items.
This morning I was feeling better than normal, so I walked over to her house and surprised her.
She didn’t mind at all.
In fact, since she is from Spain, she comes from a culture where people drop in to see good friends or relatives without calling first. It’s the same in India, where my parents are from. So she was actually sorta delighted.
She had lovely fresh herbs and I asked if I could have a little of her oregano. She also gave me fresh thyme and parsley. Enough for a small, fragrant bouquet.
I wondered what I could cook to be worthy of this bounty.
I had stew meat in the freezer that I got a few months ago. I’m thawing it and will make Stifado with it tomorrow. I need to do this early, while I still have some energy. By the afternoon, I tend to be exhausted and need a nap.
