Roasted Shrimp With Vegetables and Herbs
Back to healthy eating after taking some cheats
During the most difficult parts of my chemo, I did cheat a few times, though I tried to mostly stay on my diet. I recently received some good news regarding my cancer markers, however. Instead of using this as an excuse to cheat, I doubled down on my healthy diet.
For dinner tonight, I used wild caught shrimp, organic vegetables (yellow squash, zucchini, red onion, red pepper, and roma tomatoes), plenty of extra-virgin olive oil, seasoned with salt, and flavored with fresh minced garlic, fresh lemon, and fresh chopped dill.
I added the herbs at the very end along with some green peas, which I just barely warmed.
This dish is super easy to make, especially if you have a sweet mother who is willing to be your sous chef. She still does this for me on days when my balance is off because she doesn’t want me to trip and fall. So I make sure I don’t wear myself out, but I do as much as I can because that makes me feel better about myself.
It’s a balance, and there are also days when Mom needs more support, and on those days, I do my best to give it to her or to find a friend who can help.
