Simple healthy soup
Part of my anti-cancer diet
Since being diagnosed with cancer, I’ve changed my diet. I’ll write more about why and how in another article. For this one, suffice it to say that I’m focusing on healthy ingredients such as organic vegetables, home-made bone broth made from pastured and humanely treated livestock, and healthy fats like olive oil.
Soup has become a mainstay for me as it is nourishing, easy to digest, and comforting. Plus I can freeze part of each batch so I have healthy meals on days I am too tired to cook.
The above simple soup was made with the last of the spicy peppers from my garden and the last few sprays of parsley. The peppers turned out to be spicier than I anticipated, but this was actually a good thing, as it helped clear out my sinuses. One tip that I usually follow, but didn’t this time — with fresh peppers, cut and taste a tiny bit before adding to a recipe, as heat level may vary. Also, if you’re not wearing gloves when working with hot peppers — wash your hands before you touch your face!
