Mom makes me omelettes

I went through radiation treatment recently. It sapped my energy and it was hard to cook, particularly since I can no longer use my right hand. But I need to eat healthy food and I need protein.

A few friends helped out and my boyfriend ordered dinners for me from Uber Eats, but it’s been hard getting stuff that follows my dietary restrictions.

Then my Mom stepped in.

My Mom is from India and she’s vegetarian. She does eat milk products, but no eggs. It’s against her religion.

Nevertheless, she started to make me a daily omelette.

I use pastured organic eggs from a local farm. Mom whips two of them up, and uses healthy oils to create the perfect omelette. Then she adds vegetables, also perfectly cooked.

She has never tasted an omelette. Yet each time — it’s perfect.

The omelette gives me the healthy protein I need so my body can heal. It’s simple, delicious and nutritious.

Mom makes me an omelette every day because she loves me. I feel very blessed to have her in my life.
