The problem with pesticides is that they get absorbed by the plant and then people ingest them. Some people are more sensitive than others. When I got cancer as a young woman, I was given 6 months to live. To try to beat that diagnosis, I did a lot of research and I transformed my life.

Among the things I did — eat organic. It’s not that organic food necessarily has more nutrients, it’s that it doesn’t have the pesticides. So it’s easier on the body and healthier.

Plus, like you say — using a natural rotation system nourishes the soil instead of using it up, which is more sustainable. So organic isn’t just good for people, it’s good for the soil and long run it is better for farmers too.

Also, apparently the wheat has been genetically modified in ways that have made it less digestible. Many people who are sensitive to wheat can eat ancient varieties such as einkorn without a problem.
