This is a good point, though that is food regional to the American Southwest, not the Northeast or the Northern plains… but it’s a really good point. I love venison, but have never actually shot a deer. I should learn to do it. Not sure if I could, but it’s sorta hypocritical to eat the meat if you’re not willing to kill it, gut it, etc.

One thing I’ve found living in Texas — they take their version of Mexican seriously. And Mexican is different depending on where you live — New Mexico’s cuisine is more delicately flavored, for example.

One of my favorite South American cuisines is Peruvian. Another thing I really like are the saltenas from Bolivia.
