With meat, for me the problem is not eating meat but eating factory farm abused meat. I only buy pastured, grass fed meat and eggs and wild-caught fish. I stopped drinking milk because I don't think it's cool to take the calves from their mothers right after birth. I used to get milk from a local organic farm where the calves were weaned before being separated.
I do think that eating pastured, humanely treated animal protein in moderation is healthy.
For the rest of it, the books you mention deal with FACTS, not FEELINGS. Therefore, many people will not bother reading them. Our educational system no longer teaches kids about rational thinking or logic, it seems, which is why instead of addressing an argument with facts, people just have meltdowns, call people names, etc. It's counter-productive.
